    Hello Rosemary, the choux cake is a Saint-Honoré, a French traditional cake.
    The cream is usually lighter (close to crème Chantilly).

  4. This sounds like an excellent place to get a bargain gourmet meal. There’s a chef school in Nice which I must check out, I think they also do this. Let us know how the other evenings/options go.   6. What a great idea! Gives the students experience and immediate feedback that they may not get from friends or family. Will keep it in mind if we ever make it back to Blois 🙂
